    Traditional to the Tyneside town of Gateshead, these were made by the men digging the Manchester Ship Canal and fried on their shovels over a fire.

    List of Ingredients




    1 large potato, peeled
    1 large onion
    1 egg, beaten
    25g (1oz) self-raising flour
    Oil or lard to grease frying pan (or spade!)
    75g (3oz) chopped bacon
    Seasoning

    Recipe



    Coarsely grate the potato and squeeze out any liquid then grate the onion and add the bacon.



    Mix in the egg and flour, season well. Drop in spoonfuls onto the hot oil and fry, turning until well browned on both sides.



    Eat hot as an accompaniment to breakfast sausage and eggs or supper dishes.
