    4 chicken breasts, boned
    150g / 5oz Double Gloucester with onion & chives, grated
    75g / 3oz butter
    25g / 1oz streaky bacon
    50g / 2oz plain flour
    1 egg, beaten
    breadcrumbs, toasted
    1 tbsp vegetable oil
    watercress sprigs to garnish

    Recipe



    1. Skin the chicken breasts, place in a polythene bag and beat with a rolling pin until flattened.
    2. Mix the cheese with 50g / 2oz butter and the bacon and divide between the pieces of chicken.
    3. Roll the chicken pieces up neatly and secure with a wooden cocktail stick.
    4. Toss in flour, brush with egg and coat in breadcrumbs.
    5. Allow to chill.
    6. Sauté in the remaining butter and the oil until golden.
    7. Place in an ovenproof casserole dish and bake in an oven at 190°C / 375°F / gas mark 5 for 20 -30 minutes.
    8. Garnish with watercress

    Serves 4
