    4 boned chicken breasts
    150g(5oz) Cotswold, grated
    75g(3oz) butter
    25g(1oz) streaky bacon
    4 wooden cocktail sticks
    50g(2oz) plain flour
    1 egg, beaten
    Toasted breadcrumbs
    1 tbsp vegetable oil
    Watercress sprigs to garnish

    Recipe



    * Skin the chicken breasts and place in a polythene bag, beat with a rolling pin until flattened.
    * Mix cheese with 50g(2oz) of butter and bacon and divide between pieces of chicken.
    * Roll up neatly and secure with a wooden cocktail stick.
    * Toss in flour, brush with egg and coat in breadcrumbs. Allow to chill.
    * Sauté in remaining butter and oil until golden. Then place in ovenproof casserole dish.
    * Bake 190C(375F), gas mark 5, for 20 to 30mins. Garnish with watercress.

    Serves 4.
