    1 jointed rabbit
    1 oz dripping
    1 large onion (sliced)
    2 carrots (sliced)
    1 and half pints stock
    3 large, thick slices of bread (with crusts)

    Recipe



    Melt dripping and fry rabbit floured joints until brown. Add sliced onions and carrots, pour in stock and bring to boil. Season to taste. Transfer to casserole dish, cover and cook in oven (350F/Mark 4) for about 1 hour or until joints are tender. Cut bread slices diagonally and dip into gravy. Place on top of casserole (gravy side up) and cook for further 40 minutes, uncovered until crisp. Serve with boiled potatoes.
