1/2 lb strong white bread flour
    1 tsp easy-blend yeast
    1/2 tsp salt
    1 tbsp sugar
    1 oz butter, melted
    1/4 pt milk, warmed

    Icing sugar
    Clotted cream
    A deliciously fruity jam

    Recipe

. Mix together the flour, yeast, salt and sugar
    2. Add the warm milk and melted butter, knead to a smooth elastic dough
    3. Cover with film and leave to rise until doubled in size - about 1 hour - in a warm place
    4. Knock back and knead again briefly
    5. Divide and shape the dough into eight small round buns
    6. Space them well apart on a greased baking tray
    7. Cover and set aside to prove (rise) until light and puffy looking - about 20 minutes
    8. Bake at 425 F (220 C) gas mark 7 for 15-20 minutes until golden brown
    9. When cool, cut each bun down the middle, from top to bottom but not all the way through
    10. Split open and add lashings of cream and jam, then dust with icing sugar and serve
