• Four baking potatoes
• 175g (60z) lean back bacon
• A dash of vinegar
• Four Lion Quality eggs
• Four tablespoons snipped fresh chives
• 100g (3½ oz) cherry tomatoes, halved
• Splash of semi-skimmed milkRecipe
1.Preheat the oven to Gas Mark 7/220ºC/425ºF. Bake the potatoes for about an hour or until tender. Alternatively prick the potatoes all over with a fork and microwave on high for 10 minutes or until well-cooked but not overdone.
2.Meanwhile cook the bacon under a hot grill for 6-8 minutes, turning once, until it is crisp and golden. Snip into bite sized pieces and set aside.
3.When the potatoes are cooked, bring a large frying pan of salted water to the boil. Add the vinegar. Poach the eggs in the simmering water for 3-5 minutes until cooked to your liking.
Serves 4.
