    1lb lean pork
    Pinch of dried sage
    Pinch of dried thyme
    Pinch of dried marjoram
    Salt & pepper
    Grated rind of 1 lemon
    Pinch of ground nutmeg
    1lb butcher's suet
    1 large egg
    Dripping

    Recipe



    Mince the pork finely and mix it with the herbs, seasoning, lemon rind and nutmeg in a bowl. Grate the butcher's suet and beat in the egg. Mix well until blended and mould into 20 sausage shapes, using your hands. Smear a frying pan with dripping and fry the sausages very gently for about 10 minutes, or until cooked through.

    Serve hot or cold.
