    6 ozs shortcrust pastry
    2 oz softened butter
    2 oz sugar
    A few drops almond essence
    1 beaten egg
    2 oz ground rice
    Raspberry or apricot jam

    Recipe



    Roll out pastry and use to line 16 greased and floured tart tins. Cream butter and sugar, then stir in almond essence and egg. Fold in ground rice. Place a little jam in each case and top with a spoonful of mixture. Cook for 15/20 minutes (375F/Mark5)
