    Not really cakes at all, but a spicy shortbread. The traditional way to
    make Gossnargh Cakes was to form the dough into a neat square and place
    on a baking sheet. When cooked, it was cut into squares while still warm

    List of Ingredients




    8oz flour
    pinch of salt
    6oz butter
    half teaspoon caraway seeds
    half teaspoon ground coriander
    1oz caster sugar
    a little extra sugar

    Recipe



    In a bowl, sift the flour and salt together, then rub in the butter
    until the mixture resembles fine breadcrumbs and work together until a
    smooth dough is formed. Turn out on to a lightly floured surface and
    roll out to quarter inch in thickness, the cut into 2-inch rounds. Place
    on a large, well-greased baking sheet. Mix together the spices and sugar
    and sprinkle over the cakes. Leave in a cool place overnight. Set oven
    to 300°F or Mark 2 and bake the cales for 40 to 50 minutes until firm,
    but still quite pale in colour. Place on a wire rack and sprinkle over
    the extra sugar while still warm. Makes about 16.
