    List of Ingredients

2lb good braising or stewing beef (a helluva lot of meat)
3 big potatoes or half a dozen small ones
    Parsnips
    Peppers, green or red
    Onion
    Celery maybe
    Bisto
    Oxo cube
    1tsp Bovril
    Worcestershire sauce
    Honey
    Mustard

    Recipe

You need to make some gravy and I'm giving you my secret here. Even Loyd Grossman would be envious of that gravy. He'll probably patent it and make a fortune.

Here's how I make it: with some Bisto, an Oxo cube crumbled up, 1tsp Bovril, a liberal splash of Worcestershire sauce, 1Ž2tsp honey and 1Ž2tsp mustard. Mix it all together. It goes into a gungey, semi-solid mass. Then add in a little drop of water until it's loose. You need enough to cover the bottom of the casserole - say an inch.

Now get some really good braising or stewing beef. Peel your potatoes. Get a really nice big casserole dish. Layer it with sliced potato then put vegetables on top - you can use any root veg. Or pulses. Then another layer of beef, then another layer of potato. You want to have two layers of meat and three of potato, with a top level of potato.

Shove into the oven until cooked. You can't really overdo it but about 21Ž2 hours at about 170°-180°C/ 340°-360°F is about right. For the last 10 minutes put it under a hot grill so the top layer of potatoes get all brown and crispy."

'Greavsie: The Autobiography' by Jimmy Greaves is published by Time Warner Books,
