    Mushrooms are high in B vitamins, which are said to reduce stress, and they also contain selenium, a trace element that is essential to human health and is good for the immune system.

    List of Ingredients




    500gm mushrooms, chopped
    1ltr fresh vegetable stock
    Few pieces of dried mushroom
    2 tablespoons butter
    1 onion, finely chopped
    2 tablespoons flour
    1 bay leaf
    Freshly ground salt and pepper
    250ml cream

    Recipe



    Bring the stock to the boil. Add the dried mushroom, cover, remove from heat and set aside.

    In a separate pan, sauté the onion in butter over a moderate heat until transparent.
    Add mushrooms and simmer, covered, for 10 minutes.

    Blend in the flour and cook for a few minutes. Gradually stir in the stock and bring to the boil. Add bay leaf and simmer for 15 minutes. Remove bay leaf and dried mushroom and blend in a processor.

    Reheat, adding the cream and seasoning, then serve with your favourite crusty bread.
