Irish Glazed Pork Chops and Irish Applesauce
2 large pork chops, well trimmed of excess fat
Applesauce (recipe below)
Glaze (recipe below)

Place frenched (bone left on and well trimmed of excess fat) pork chops on a grill and cook on each side until done. No seasonings are needed, since a glaze is being used. Place grilled pork chops into the glaze while it is still in the pan on the stove top and turn frequently until they are well coated. Serve hot glazed pork chops on a plate along with a generous portion of hot applesauce topped with a little brown sugar.
IRISH APPLESAUCE
3 large Granny Smith Apples peeled and sliced
2 tablespoons butter
1/4 cup Irish whiskey
1/2 cup applesauce (any canned sauce may be used)
Sugar to taste
Place apples, butter, Irish whiskey, applesauce and sugar in a small sauce pan over medium heat. Stir frequently, and simmer for 15 to 20 minutes. Be sure to allow the alcohol in the whiskey to evaporate and also be careful to not overcook the apples so that they will retain a firm texture and not become too mushy.
GLAZE FOR PORK CHOPS
Applesauce (any canned sauce may be used), 1/2 - 1 cup
2 tablespoons brown sugar
1 teaspoon Worcestershire sauce
Dijon mustard to taste
Butter to taste
Over medium heat place applesauce, brown sugar, Worcestershire sauce, and Dijon mustard into a saucepan and stir until all is heated.
Continue stirring and add butter to pan and stir to cream and smooth out the glaze.
