    This recipe can be associated with the traditional British lamb and mint sauce. Using fresh mint will give you a better result, milder in taste, but also more refined. This lovely dish would go well served with peas, which you can combine with smoked bacon and finish with mint as well.

    List of Ingredients




    4 legs of lamb steak bone in
    salt & pepper for seasoning
    50g of butter
    5ml of olive oil
    2 onions chopped
    2 garlic cloves chopped
    200ml of white wine
    400ml of demi-glasse
    2 tablespoons of chopped mint
    2 tablespoons of chopped parsley

    Recipe



    Season the meat well with salt and pepper. Colour the meat on both sides using half the butter and oil. Remove the meat to a plate aside .

    Add the onions to the pan and fry them until coloured. Add the chopped garlic and cook for 2 or 3 minutes. Add the white wine and reduce it to 1/3. Add the demi-glasse, then reduce it for a few more minutes.

    At this stage you can return the meat to finish. 3 minutes cooking time should be enough, but allow more time if you want the meat to be more cooked.

    To finish add the herbs and 25g of butter to the sauce. Rectify the seasoning and serve as soon as possible.
