    Lancashire Strawberry Pancakes

    • 4 Scotch pancakes
    • 12 strawberries
    • 2 tbsp low-sugar strawberry jam
    • A squeeze of lemon juice
    • 60g (2oz) Lancashire cheese, crumbled

    Recipe



    1. With a small knife, hull the strawberries (remove their stalks and the white area where the stalk joins the fruit). Cut the strawberries in half.

    2. Put two tablespoons of low sugar strawberry jam into a small bowl. Add a little lemon juice to thin the jam, and stir until well mixed.

    3. Toss the halved strawberries in the thinned jam until coated.

    4. Warm the scotch pancakes in a pan or under the grill following the instructions on the packet.

    5. Prepare four plates and place one Scotch pancake onto each. Spoon a quarter of the strawberries and jam mixture onto each pancake.

    6. Sprinkle the crumbled Lancashire cheese over the top of the strawberries. Enjoy!

    Serves 4.
