    Day old bread - 110g (4 oz)
    Ground dried sage - a little
    Salt and Pepper
    Lean minced pork - 675g (1½ lb)

    Recipe



    Soak the bread and squeeze as dry as possible, add a little ground sage and pepper and salt to taste.


    Mix with the minced pork and form into shape, wrap in a piece of caul and put on a baking tin. Alternatively, press the mixture into a rectangular loaf tin.


    Bake in a moderate oven at 170 °C / 325 °F / Gas 3 for one hour.

    Serves 8.
