    • Four rashers back bacon, de-rinded
    • 300g Smash
    • Two spring onions, finely chopped
    • Salt and freshly ground black pepper
    • Topped with one or two poached eggs

    Recipe



    1. Place the bacon under a preheated grill for two to three minutes each side or until crispy then roughly chop.
    2. Meanwhile, heat the Smash according to the instructions on the pack then add the chopped bacon and spring onions and season to taste.
    3. Serve with a poached egg on top and a dollop of tomato ketchup.

    Serves 2.
