Recipe Introduction
In some rural areas, it was usual at Hallowe’en supper to serve a ‘Mash of Nine Sorts’ to unmarried guests. The lady of the house would hide her wedding ring in it. The lucky finder would be the first of the guests to find a partner. Originally there were just the ‘nine’ ingredients but if you add cheese and butter to the dish it makes it a lot tastier.
List of Ingredients
Potatoes - 450g (1 lb)
Carrots - 2
Turnip - 1
Parsnip - 1
Salt and pepper
Single cream - a little
Cheddar cheese - 110g (4 oz), grated
Butter - 50g (2 oz)
Leeks - 2, finely sliced
Peas - 110g (4 oz), cooked
Recipe
Preheat the oven to 180 ºC / 350 ºF / Gas 4.
Peel all the vegetables, except the peas, and either halve (in the case of the potatoes) or slice. Boil the potatoes in one pan of salted water until tender. Boil the carrots, turnip and parsnip in another. Drain the potatoes and the other vegetables and put them both into a large bowl.
Mash the vegetables together and then press through a sieve. Season to taste. Beat in the cream and half of the grated cheese.
Melt the butter in a frying pan and gently fry the leeks until golden brown. Tip the leeks and the butter into the mashed vegetables. Season with lots of black pepper and a little salt. Stir in the peas and transfer to an ovenproof dish.
Sprinkle with the remaining cheese and cook for 40 minutes until golden brown and bubbling.
Serves 6-8.
