Mince and potato roll

List of Ingredients
15ml (1 tbsp) Somerfield Sunflower Oil
1 onion, finely chopped
1 clove garlic, crushed
10ml (2 tsp) curry powder (optional)
450g (1lb) lean minced beef
600g (1lb 5oz) potatoes
1 red pepper, de-seeded
30ml (2 tbsp) fresh parsley, finely chopped
salt and freshly ground black pepper
TOMATO SAUCE:
1 400g can chopped tomatoes
30ml (2 tbsp) tomato purée
1 pepper, sliced
5ml (1 tsp) sugarRecipe
Heat the oil in a large saucepan. Add the onion and garlic, then cook
until soft. Add the curry powder, if using, and the mince. Cook for 20
minutes, stirring occasionally. Drain away any liquid.
Prepare and cook the potatoes and mash them.
Cube the red pepper. Mix together the mince, potatoes, pepper and
parsley. Add salt and pepper to taste.
Take a clean, damp tea towel and place the mixture in the middle. Mould
until you have formed a roll. Turn the roll onto a serving plate and
keep warm.
TOMATO SAUCE: simmer the tomatoes, tomato purée, pepper and sugar.
Season to taste.
Garnish the roll with red pepper slices from the sauce. Serve with a
salad.
