    Morecambe Bay Shrimps - small and brown - are considered to be among
    the finest in the country and have been popular since the 18th century

    List of Ingredients




    1lb shelled shrimps or prawns
    6oz butter
    1 to 2 teaspoons anchovy essence
    0.5 teaspoon mace
    pinch of cayenne pepper
    salt

    Recipe



    Set oven to 325°F or Mark 3. Cut the shrimps or prawns in half. In a
    saucepan melt 4 oz of the butter with the anchovy essence, spices and
    salt. Put the shrimps or prawns in an oven-proof dish, pour the butter
    mixture over, cover and cook in the oven for 15 to 20 minutes. Drain the
    shrimps or prawns well, reserving the butter mixture and pack into small
    jars or moulds. Strain the reserved butter mixture and pour over the
    shrimps or prawns, dividing it evenly. Leave to set. Melt the remaining
    2 oz of butter and pour onto the jars or moulds to seal the mixture.
    Place in the refrigerator overnight before serving. Serve with brown
    bread or fingers of toast. Serves 4 to 6.
