    4 oz plain flour pinch of salt 1 large egg

    1/4 pint milk

    1/4 pint water

    1 lb cooking apples

    1 1/2oz butter

    grated rind of 1/2 lemon

    1/2 tsp ground cinnamon

    3 oz soft brown sugar

    1 1/2oz lard or margarine

    Recipe



    • Sieve flour and salt into basin and make a well in the centre. Break egg into the well and stir. Gradually add half the milk and water, beating well until batter is smooth and creamy.

    • Add remaining liquid, beating with electric whisk. Leave to stand in cool place for 30 minutes.

    • Peel, core and slice apples. Melt butter in frying pan, add apples, lemon rind, cinnamon and sugar, cover and cook gently until apples are tender.

    • Put margarine in

    7.5in-square baking tin and heat in top of hot oven (220°C, 430°F, gas mark 7) until fat is smoking.

    • Remove from oven. Add apple mix. Pour batter over.

    • Return to oven for 20 minutes then reduce temperature to 190°C (375°F, gas mark 5) for a further 20-25 minutes or until batter is golden brown.
