Serves 4
300ml (½ pint) Milk
175g (6oz) Shortcrust Pastry
50g (2oz) Streaky Bacon, chopped
2 Eggs, beaten
2 tbsp Parsley, chopped
2 tsp Plain Flour
Salt and Pepper Recipe
Pre-heat oven to 200°C: 400°F: Gas 6.
Roll out the pastry on a lightly floured surface, to about ¼ inch thickness.
Line a baking tin with the pastry.
Blind bake (prick with fork and place a piece of greaseproof paper with some baking beans on pastry).
Bake for 15 minutes.
Lightly fry the bacon in a little oil, allow to cool and reserve.
Blend the flour with a little of the milk in a basin, gradually whisk in the remainder.
Whisk in the eggs.
Add the bacon and parsley, season to taste.
Pour into the pastry case.
Bake pre-heated oven at 170°C: 325°F: Gas 3, for 30-35 minutes.
Serve hot or cold.
