    800g/1 3/4lbs New Potatoes, very thinly sliced

    Butter for Greasing

    250g/9oz Onions, very thinly sliced

    250g/9oz Double Gloucester Cheese

    1 tbsp Freshly chopped Chives

    250g/9oz Streaky Bacon, chopped

    Salt and Black Pepper

    300ml/10 fl.oz. Milk

    25g/1oz Butter

    Fresh Parsley to Garnish

    1. Place the potato slices in a large bowl, cover with cold water and leave for 15 minutes. Drain thoroughly and dry with kitchen paper.



    2. Preheat the oven to 190C, 375F, Gas Mark 5 and well grease a deep 18cm x 25/7x10 inch ovenproof dish with butter.

    3. Fill the buttered dish with alternate layers of potato, onion, cheese and bacon, beginning and ending with potato and seasoning each layer with salt and pepper as you go.

    4. In a saucepan, bring the milk to the boil then pour over the potatoes. Dot with the remaining 25g/1oz of butter cover and bake for 1 hour, removing the lid after 30 minutes. Serve hot.

    Serves 4.
