    Ian Allan - STRATHCLYDE FIRE BRIGADE

    List of Ingredients




    1 oz Butter
    1 lb button mushrooms
    1/4 pint milk
    2tsp wholegrain mustard
    2tsp of chopped fresh tarragon
    1tbsp plain flour.
    3tbsp soured cream

    Recipe



    Melt the butter and fry the mushrooms for 2 minutes, stir in flour and milk. Heat, stirring continually until sauce thickens, boils and is smooth. Simmer for 1-2 minutes and stir in mustard, tarragon and sour cream. Serve hot.
