Skewered Chicken with Bramble Sauce

List of Ingredients
4 British chicken breasts or 8 thighs
4 tbsp dry white wine or cider
2 tbsp chopped fresh rosemary
ground black pepper
Sauce:
200g/7oz blackberries
1 tbsp cider vinegarRecipe
Cut the chicken into 2.5cm/1 inch pieces and
place in a bowl. Sprinkle over the wine and
rosemary, season well with back pepper.
Cover and leave to marinate for at least an hour.
Drain the marinade from the chicken and thread
the meat onto eight metal or wooden skewers.
preheat a grill until moderately hot, then grill
the chicken skewers for 8-10 minutes, turning
occasionally, until golden and evenly cooked.
Meanwhile, place the marinade in a pan with
the blackberries and simmer gently until soft.
Press though a sieve. Return to the pan with
the cider vinegar and redcurrant jelly then bring
to the boil. Boil uncovered to reduce by about
a third.
Spoon a little bramble sauce onto each plate
and place a chicken skewer on top. Sprinkle
with nutmeg and serve hot.
Garnish with rosemary and blackberries.
