    2-3 leeks, white parts only
    225ml white wine
    salt
    fingers of toast, to serve

    Recipe



    1. Slice the leeks crossways into 5cm pieces. Then slice lengthways into matchstick shreds.

    2. Put the shreds in a saucepan with salt to taste and white wine to cover. Bring to the boil, then simmer briskly until the leeks are soft and the wine has boiled away.

    3. Serve on warm fingers of toast.




    Serves 2-3 as an appetizer.
