    3/4 stick + 1 tbsp (3 1/2 oz) 100 g butter or margarine
    1/2 cup (8 Tbls) 100 g sugar
    2 eggs
    1/2 tsp vanilla essence
    1 cup (110 g) plain flour
    1 tsp baking powder
    fat for greasing

    Recipe



    1. Work together the fat and sugar until light and creamy.

    2. Beat in the eggs and vanilla essence.

    3. Sift together the flour and baking powder, and fold into the creamed mixture.

    4. Three-quarters fill 6-8 greased dariole moulds.

    5. Bake in a moderate oven at 180°C, gas mark 4, for 20-25 minutes, until set and well risen.

    6. Scoop out the inside and fill the cavity with jam or stewed fruit

    Serve cold with whipped cream
