Split Pea Fritters

These are a popular item in some southern English fish and chip shops.
List of Ingredients
Plain flour - 110g (4 oz)
Salt - pinch
Egg - 1
Milk - 300 ml (½ pint)
Butter -15g (½ oz), melted
Fresh parsley - 1 tsp, chopped
Cooked split peas - 8 tbsp, cold
Salt and freshly ground white pepper
Vegetable oil - 2 tbsp
Recipe
Sieve the flour and salt into a bowl. Beat the egg with half the milk then fold the mixture into the flour. Gradually add more of the milk until the mixture is thick enough to coat the back of a spoon. Add the melted butter and chopped parsley.
Slowly fold some of the batter into the cold peas until you have a thick pancake mix; not all the batter may be needed. Season.
Heat a little oil in a 15 cm (6 inch) pancake pan and pour the batter to about 6 mm (¼ inch) thick. Fry until golden brown, then turn over in the pan and fry the other side. Keep warm while you make 3 more fritters.
Serves 4.
