    Sussex Stuffed Marrow

    Recipe Introduction


    A rural recipe that uses a selection of the best local produce available in the South-East.



    Healthy and full of flavour the recipe will provide four large portions.

    List of Ingredients




    One medium marrow
    1lb of beef or lamb mince
    One large onion, chopped
    Two large carrots, chopped
    One stick of celery, chopped
    One clove of garlic, minced
    Beef or vegetable stock
    Seasoning to taste

    Recipe



    Fry mince until browned then transfer to a warm dish.
    Fry vegetables. Add garlic, seasoning and stock (enough to result in a moist but not too runny consistency).

    Mix with the mince and cook for approximately 1 hour.

    Skin, top and tail the marrow and remove seeds from the centre. Up-end the marrow on a sheet of tin foil, fill centre with mince mixture and seal with the foil.

    Bake in the oven at a medium temperature for approximately 1 hour until the marrow is cooked.

    Slice crossways and serve with parsley sauce.
