    List of Ingredients




    Butter - 25g (1 oz)
    Courgettes - 450g (1 lb), sliced
    Onion - 1 medium, diced
    Chopped tomatoes - 1 x 400g (14 oz) can
    Water - 150 ml (5 fl oz)
    Garlic - 1 clove, crushed
    Mushrooms - 150g (5 oz), sliced
    Tomato purée - 2 tbsp
    Mixed herbs - 2 tbsp dried
    Double cream - 2 tbsp, or crème fraîche

    Recipe



    Melt the butter in a large saucepan and fry the courgettes and onion until softened.

    Add the tomatoes, water, garlic, mushrooms, tomato purée and herbs. Simmer gently for 20-25 minutes stirring occasionally.

    Just before serving, stir in the cream.

    Serves 4.
