    This can be served as a maincourse or side dish


    List of Ingredients




    2 lb Potatoes (diced)
    8oz Leeks (shredded)
    2 Cloves Garlic (crushed)
    1 lb Broccoli (broken into florets)
    1 pt Double Cream
    1 lb Butlers Farmhouse Tasty Lancashire Cheese (grated)
    8 oz Breadcrumbs
    1 Red Pepper (finely diced)
    Pinch cayenne pepper (to taste)
    Pinch Salt (to taste)

    Recipe



    Sweat off leeks, garlic and broccoli for 2 minutes (the broccoli will still be hard at this point)

    Being careful not to break up the broccoli, put mixture in a casserole dish Mix cream with grated cheese and season with salt and pepper

    Sprinkle diced potato on top of broccoli mix to fill casserole dish and season lightly

    Pour over cream and cheese combination

    Mix together remaining cheese, breadcrumbs (fresh if possible) and finely diced pepper

    Sprinkle breadcrumb mix over potato dish and bake in a pre-heated oven set at 200 C for approximately 45 minutes.
