    • 225g (8oz) chickpeas, cooked weight
    • 90ml (3fl oz) chickpea stock from cooking or water
    • 2-4 tablespoons light tahini
    • ½ lemons, juice only
    • Two tablespoons olive oil
    • Three cloves garlic, crushed
    • ½ teaspoon salt
    • Freshly ground black pepper
    • Paprika
    • Handful watercress, chopped

    Recipe



    1. Drain the chickpeas and rinse them thoroughly. Grind them in a food processor until the texture is that of a smooth paste.
    2. Add stock, tahini, lemon juice, olive oil, garlic, salt, pepper and paprika and mix well.
    3. Check seasoning and then fill sandwiches using two slices of wholemeal bread per person, adding watercress as desired.

    Serves: 4
