An old-fashioned English dessert
This delicious sweet is similar to trifle.
List of Ingredients
6 trifle sponges
6 tbsp jam
2oz (50g) ratafia biscuits
2 tbsp brandy
3 tbsp sherry
½ oz (15g) flaked almonds
10 oz (275g) chopped fresh fruit (grapes, strawberries, oranges etc.)
1 pint (600ml) milk
1 bay leaf
6 egg yolks
2oz (50g) sugar
1 tbsp plain flour
½ pint (300ml) single cream
Recipe
Divide the sponges in half, sandwich together with the jam and cut into cubes. Place in a serving dish with the biscuits and pour over the brandy and the sherry. Leave to soak for 5 minutes before gently stirring in the almonds and most of the fruit. Put the milk and bay leaf in a pan and heat until nearly boiling. Remove from the heat and leave to stand for approximately 15 minutes. Whisk the egg yolks, sugar and flour together until they become pale and frothy - then whisk in the strained milk. Tip into a saucepan and heat gradually, stirring occasionally, until it thickens sufficiently to coat the back of a spoon (similar to the thickness of single cream). Remove from the heat and stir in the cream. Allow to cool slightly, then pour over the sponges and fruit. Decorate with the remaining fruit.
Serves 6.
