    2 Eggs

    2 Egg Yolks

    50g/2oz Sugar

    The grated Zest of 1/2 Lemon

    2 tbsp fine-cut Marmalade

    100g/4oz Butter, Melted

    225g/8oz Shortcrust Pastry

    Recipe



    1. Preheat the oven to 220C, 425F, Gas Mark 7.



    2. Roll the pastry out on a floured surface to 5mm/1/4 inch and use to line an and fill with baking beans. Bake for 10 minutes.



    3. Meanwhile, in a large mixing bowl, beat together the eggs, egg yolks and sugar, lemon zest and marmalade then whisk in the melted butter.



    4. Remove the baking beans and parchment paper from the pastry case and reduce the oven temperature to 190C, 375F, Gas mark 5.



    5. Pour the egg mixture into the pastry case then return to the oven and and bake for 20 minutes. Serve hot.


    Serves 6.
