    For 4 Servings
    ½ medium green pepper, diced
    1 medium onion, finely chopped
    1 garlic clove, crushed
    ½ tsp chopped basil leaves
    1 tbsp olive oil
    50g (2oz) macaroni
    900ml (1½pt) water
    2 x 10.75 oz tins tomato soup
    16oz tin kidney beans
    salt and pepper
    2 tbsp lemon juice
    50g (2oz) tin anchovy fillets, drained, optional

    Recipe



    Cook the green pepper, onion, garlic and basil in oil until tender.
    Bring water to the boil in a separate pan and add macaroni, cook for 10 minutes or until just tender. Do not drain.
    Add green pepper and onion mixture with tinned soup, beans, and seasoning to the macaroni and water.
    Add lemon juice to taste. Reheat. Chop anchovies and sprinkle on top or serve separately , if using.

    Good served with:
    Fresh rolls, cheese and pickle.

    Variations:
    Why not use cream of chicken or mushroom soup instead of tomato for a change. A swirl of cream could also be added.
