    List of Ingredients




    1- medium pkg. Joseph Farms Monterey Jack cheese
    1- ball Joseph Farms Mozzarella cheese
    1- medium pkg. Joseph Farms Longhorn cheese
    4- dozen corn tortillas cut in triangles
    1- 28 - 32 oz. can of Las Palmas enchilada sauce
    1- large can of sliced olives
    1/2- tsp. salt
    1/2 tsp. pepper
    1- 10 3/4 oz. can cream of mushroom soup
    1- medium chopped onion
    2- lbs. hamburger
    1- tsp. garlic
    1- tsp. minced onion

    Recipe



    Brown ground meat and drain. Add minced onion, garlic, salt and pepper to the meat. Set aside. Drain olives, chop medium onion, and grate cheese. Keep everything separate. In a large bowl, mix tortillas cut into triangles. Mix enchilada sauce and cream of mushroom soup. Pour sauce mix into tortillas and mix. Pour half of tortilla mix into an oblong baking dish. Add 1/2 hamburger then place layer of Joseph Farms Monterey Jack cheese first, then scatter olives over cheese. Pour second layer of tortilla mix over first layer. Again add tortilla mix, Joseph Farms Mozzarella cheese, and olives, then Joseph Farms Longhorn cheese and olives, again.

    Place into oven at 400 degrees F. for one half hour. Remove from oven, then cool for 15 to 20 minutes before serving. Cut into squares to serve.

    Optional: garnish with more sauce, avocado, garden green onions (chopped), or a small scoop of sour cream.
