    CAROLINES LEMON PEPPER CHICKEN CASSEROLE

    List of Ingredients




    4 boneless, skinless chicken breasts
    1 can (10.75 oz) condensed cream of mushroom soup
    1 can (10.75 oz) condensed cream of celery soup
    1/4 cup mayonnaise
    2 cups milk
    2 tablespoons Caroline's Lemon-Pepper Blend
    1/2 small onion, finely chopped
    1 cup frozen peas
    1/2 cup diced celery
    1 1/2 cups dry instant rice
    2 cups shredded cheddar cheese
    Parsley and tomato for garnish

    Recipe



    Pre-heat oven to 350 F. Cook chicken in olive oil until done. Cube or shred cooked chicken. Place in the bottom of a 9x13 baking dish or similar size casserole.

    In a large bowl, combine soup, mayonnaise and milk. Stir until smooth. Mix in Caroline's Lemon-Pepper Blend, onion, peas, celery, rice and the cheese. Pour mix over chicken. Bake at 350 F for 30 minutes or until hot and bubbly through. Garnish with sprigs of parsley and fresh tomato.
