The All-American Cowboy Cookbook Home Cookin on the Range by Ken Beck and Jim Clark

    List of Ingredients

1/2 Pound Fresh Mushrooms -- Sliced
    1 Large Onion -- Chopped
1/2 Stick Butter Or Margarine -- Divided
    2 Pounds Top Sirloin Steak
    All-Purpose Flour
    1 Teaspoon Salt
1 10 1/2-Oz Can Beef Broth, Diluted With Water To Make
    2 Cups
1 Cup Sour Cream -- At Room Temperature
    Hot, Cooked Rice Or Noodles

    Recipe

Saute the mushrooms and onion in 2 tablespoons butter and remove from pan. Cut the meat into strips. Melt butter in a heavy skillet. Coat meat with flour and brown in butter. Add salt and broth mixture. Simmer, stirring occasionally, for about 45 minutes, or until meat is tender. Add mushrooms-onion mixture. Add sour cream a little at a time so it won't curdle. Simmer until blended. If thicker gravay is desired, add flour mixed with cold water to the sauce and simmer until desired thickness.
Serve over hot rice or noodles.

    Makes 8 servings.
