    Maui Yam Casserole

    2 pounds canned yams

    1 teaspoon cinnamon

    11/4 teaspoon salt

    1 egg

    1/4 cup pineapple juice

    1/4 cup sugar

    3 tablespoons butter

    1/2 cup chopped macadamia nuts

    Recipe



    Mix and mash together all but 1 tablespoon butter and nuts. Spoon into 1-quart casserole. Melt remaining butter in small frying pan and add chopped nuts. Stir constantly until lightly toasted. Sprinkle over casserole. Bake uncovered at 375 degrees for 35 minutes.

    Serves 6.
