    Mickey's Good Ol' Casserole

    3 Tbs. olive oil (use at least 1 Tbs. and not more than 1/4 cup)
    4 to 5 cloves garlic
    1 green or red bell pepper (or 1/2 each), diced
    1 medium yellow onion, diced
    1 to 1-1/2 lbs. lean ground beef
    2 cups crushed tomatoes
    1/2 teaspoon oregano flakes, or to taste
    1/2 teaspoon dried basil, or to taste
    Anise seed to taste
    Salt and black pepper to taste
    1 lb. elbow macaroni, cooked and drained
    2 cups shredded mozzarella cheese

    In a large, deep skillet heat olive oil. Add whole garlic cloves and brown. Leaving garlic in oil, add diced pepper. Let simmer until peppers lose crispness. Add diced yellow onion and simmer vegetables on low flame until soft. Do not burn them. Push vegetables to the outer edge of the skillet and add ground beef. Using a higher flame, brown the beef. When beef is thoroughly cooked (no pink showing), add crushed tomatoes, stirring to combine. Add oregano flakes, basil, anise seeds, salt and pepper to taste. When mixture starts to boil, lower heat, cover and simmer, stirring occasionally.

    In a pot of boiling water, cook pasta to package directions. Drain macaroni and return to pot. Pour skillet contents over macaroni and mix thoroughly. Pour 1/3 of this mixture into a deep casserole dish and top with 1/3 of cheese; repeat twice. Cover dish and place in a 250-degree oven for approximately 10 minutes to allow the cheese to melt.

    Serve immediately.
