    North Country Broccoli Casserole

    List of Ingredients




    1 pound fresh broccoli -- chopped
    1 egg -- lightly beaten
    1/2 cup creamed cottage cheese
    1 cup milk
    Juice of 1/2 lemon
    12 Vermont crackers -- crumbled
    Salt
    Freshly ground pepper
    1/2 pound frankfurters -- coarsely chopped
    2 tablespoons melted butter

    Cook the broccoli in a little salted water for about 5 minutes, until
    tender but, not soft. Drain and pour into a greased casserole. Mix the
    beaten egg with the creamed cottage cheese, milk, and the lemon juice.
    Sprinkle in alittle salt, a sprinkle of pepper, and the nutmeg. Stir in the
    chopped frankfurters, and pour the sauce over the broccoli. Mix the butter
    and crumbled crackers, and spread the mixture over the contents of the
    casserole.
    Bake at 350 F. about 30 minutes, until browned.
