Throw Together Classic Beef Casserole

Serves 3-4
List of Ingredients
500g lean stewing beef
1 large onion - sliced
1 clove garlic - crushed
4 large carrots - peeled & sliced
4 sticks celery
2 beef oxo cubes - crumbled
1 teaspoon mixed herbs - optional Recipe
Throw the meat, onion, garlic, carrots and celery into a medium pan.
Fill half way (or covering the meat and vegetables) with water.
Add the herbs (if using) and the crumbled oxo cubes.
Bring to the boil then lower the heat and simmer until the meat is tender and the juices have halved, approx. 1 hour (depending on the quality of the stewing beef).
Season to taste.
Serve with jacket potatoes and saute green vegetables.
Note:You may wish to thicken the sauce with a little cornflour mixed with water.
