List of Ingredients




2 egg yolks

5 egg whites

2 tablespoons non-fat half and half

1/8 teaspoon salt

4 ounces low-fat cream cheese

1 cup crushed pineapple, drained

Recipe



Mix cream cheese and pineapple, being sure pineapple is well drained. Use cooking spray to lightly coat a 10-inch frying pan. Whip eggs, salt and half and half until frothy. Set heat to medium low, as you want the omelette to cook slowly. Pour egg mixture into pan and cover.

When eggs are set, spread half of the omelette with the cheese mixture and flip the other half over it. Wait 1 minute to let the cream cheese melt. Enjoy with toast or a bagel.

Serves 2.
