    Dave Couliers Swordfish w/ Tomato Sauce

    List of Ingredients




    4 x Swordfish steaks
    2 x Cloves garlic, minced
    3 tbl Extra virgin olive oil
    4 cup Prepared or homemade chunky tomato sauce
    3 tbl Cilantro, finely chopd
    Fresh ground pepper, to taste
    4 tbl Black olives, minced
    1 tsp Sugar
    1/3 cup Lime juice
    Parsley sprigs, for garnish

    # Preheat broiler. Place swordfish in a shallow baking dish. Rub with garlic.
    # Drizzle olive oil over fish. Broil for about five minutes on each side, or until fish flakes easily and is firm in the center. In a large pot, combine tomato sauce, cilantro, pepper, olives, sugar and lime juice. Warm on Low heat for several minutes. When fish is cooked, place on serving platter.
    # Pour tomato sauce mixture on top. Garnish with parsley.
    # Serving Ideas : Swordfish can also be grilled.
