    Dom's Roasted Red Potatoes

    8 small red potatoes, quartered
    2 cloves garlic, chopped
    1/2 onion, thinly sliced
    2 teaspoons olive oil
    2 tablespoons Dom DeLuise's Italian Blend
    2 teaspoons dry Rosemary
    grated Parmesan cheese.

    Recipe



    Put potatoes, garlic, and onion on a large piece of foil. Drizzle with olive
    oil. Sprinkle with Dom's Italian Blend, Rosemary and Parmesan cheese. Fold
    foil to form a pouch. Bake 45 minutes at 350 F. Sprinkle with more Parmesan,
    if desired.

    Serves 4

    I sometimes add red and green peppers to this
    recipe, so if you have some, slice them up and throw them in the mix too.

    If you end up with some leftovers, which is very unlikely, save them for
    breakfast the next morning. Toss them in a skillet and add some eggs and milk
    and cheddar or jack cheese and make yourself a delicious Frittata or scramble.
    If you have any ham lying around, throw it in, add green peppers, and you've
    gone from Italy to Denver non-stop!
