    KIRK'S SOUTHERN POUND CAKE

    2 cups butter, softened
    2 3/4 cups sugar
    6 eggs
    3 3/4 cups flour
    1/8 teaspoon salt
    1/4 teaspoon ground nutmeg
    1/2 cup milk
    1 teaspoon vanilla extract
    1/2 teaspoon almond extract

    Preheat oven to 325 degrees. Beat butter with mixer at medium speed, about 2 minutes, until soft and creamy. Gradually add sugar, beating at medium speed about 5-7 minutes. Add eggs, one at a time, beating just until yolk disappears. Combine flour, salt and nutmeg. Add to creamed mixture, alternately with milk, beginning and ending with flour mixture. Mix at low speed just until blended after each addition. Stir in vanilla and almond extract. Pour batter into a greased and floured bundt pan.
    Bake 75-80 minutes, or until a toothpick inserted into the center of the cake comes out clean. Cool in pan on a wire rack 10-15 minutes. Remove from pan and let cool completely on a wire rack before serving. (Kirk likes it served with strawberries and whipped cream.) — Kirk and Haley Snyder
