    3 lbs. conch
    4 C. water
    3 tomatoes cut in small pieces
    1/4 C. oil
    2 Tbs. butter
    1 tsp. black pepper
    1 tsp. garlic powder
    3 tbs. tomato paste
    Hot sauce to taste
    Piklis (Haitian peppers in vinegar)

    Recipe



    1. Cook conch in a pressure cooker for 60 minutes.
    2. Saute sliced tomatoes and onions in oil until softened, adding some of piklis liquid to taste.
    3. Add conch pieces to pan, reserving conch broth.
    4. Add butter, tomato paste and spices and some of the conch broth and simmer for 20 minutes.
