    Montel's Maryland Crab Cakes

    Ingredients:

    1 lb. fresh crab meat, shelled and clean
    20 no or low-salt saltine crackers, crushed fine
    Crushed red pepper flakes (to taste)
    1 1/2 tbsp. Old Bay seasoning
    1 tbsp. dried parsley, crushed
    1/2 c. mayonnaise
    1 tbsp. Worcestershire
    1 large egg
    3 shakes of Tabasco sauce
    1 tsp. dry mustard or 1 tbsp. of prepared mustard
    Vegetable oil for frying





    Recipe



    In a large bowl, combine the crab meat, crackers, red-pepper flakes, Old Bay and parsley.

    In a separate bowl, mix the mayonnaise, Worcestershire, egg, Tabasco and mustard.

    Combine both mixtures and then form into patties using about 3 tbsp. for each.

    In a large skillet heat enough vegetable oil to cover patties at least halfway, when the oil is sizzling add the patties and fry 3 minutes on each side or until golden brown.

    Drain and enjoy.
