    Ozzie Smith's blackened chicken sandwich

    Here's one from former All-Star shortstop Ozzie Smith's restaurant in St. Louis called, surprisingly enough, Ozzie's. Bon appetit!

    List of Ingredients




    6 oz chicken breast pounded thin
    1/2 oz cajun seasoning
    1 oz cheddar cheese
    1 oz mayonnaise
    2 tomatos each sliced 1/4"
    1 oz shredded lettuce
    1 sesame hoagie roll, sliced
    5 oz fries, cooked, hot
    1 pickle spear, fresh

    Recipe



    1. Heat blackening skillet over medium heat until smoking (451 degrees)
    2. Evenly sprinkle 1/4 oz of cajun seasoning on each side of breast. **
    3. Ladle oil into skillet, oil will begin to smoke
    4. Immediately add chicken to skillet. To avoid burns, be careful as oil will splatter.
    5. Cook chicken approximately 1 minute each side until properly blackened.
    6. While chicken is cooking, split hinge on roll to form a top and bottom.
    Place cheese slices on top half of the roll to completely cover the cut surface. Place both halves in toaster oven, cut side up, until cheese is melted and roll bottom is toasted.
    7. Spread mayo evenly on bottom half of roll, then fluff shredded lettuce atop the mayo; shingle the tomato slices atop the lettuce.
    8. Split chicken breast in half to remove gristle from center.
    9. Place blackened chicken over tomato slices. Close sandwich, secure sandwich close with 2 frill picks, and cut in half at a 45 degree angle. Serve on a hot 9" round plate after adding hot fries to open area of plate.



    **Chicken must be seasoned to order!!! Never pre-season chicken as it will drastically change the texture of the meat.


    Garnish with pickle spear. One serving.
