This dip was a house specialty at the Gatlins' former restaurant at the Mall of America in Minnesota.



List of Ingredients




2 15-ounce cans black beans, rinsed and drained
1 cup salsa
1 4-ounce can diced green chile peppers, drained
1 medium tomato, finely chopped
1/2 cup sliced greeen onions
1 cup shredded Monterey Jack cheese
Tortilla chips


Recipe



Place half the beans and salsa in a blender container. Cover; blend till smooth. Repeat with remaining beans and salsa.

Spoon bean mixture into a 9-inch pie plate. Top with chile peppers, tomato and green onions.

Bake, uncovered, in a 350 degree oven for 20 minutes. Top with cheese; bake 5 minutes more. Serve with tortilla chips.

10 to 12 servings.
