    Smith says he makes a "mean barbecue chicken. The secret is in the marinade. You have to marinate it for at least an hour.








    List of Ingredients




    1 tbsp vegetable oil
    1 onion, finely chopped
    2 cloves garlic, finely chopped
    3/4 cup ketchup
    1/4 cup cider vinegar
    1/4 cup brown sugar
    2 tsp chili powder
    Tabasco sauce (optional)
    3 lb chicken pieces

    Recipe



    In a small saucepan, heat oil and cook onion until softened but not browned, about 3 minutes. Stir in garlic and cook 1 minute. Add ketchup, vinegar, sugar, chili powder and Tabasco sauce, if using, to taste. Simmer 5 minutes. In a shallow baking dish, arrange chicken pieces in a single layer. Bake uncovered in 350 F (180 C) oven for 30 minutes, turning once. Using tongs, remove the chicken from baking dish and brush both sides generously with sauce. Grill over medium-high heat or broil in oven, basting with sauce often until the chicken is glazed on the outside and no longer pink on the inside, about 5 to 7 minutes each side. Serves 6.
    Per serving (including skin): 345 calories, 31 g protein, 16 g fat, 19 g carbohydrate.
